Balsamic Vinaigrette-Glazed Cherry Polenta Cheesecake
Gourmet Farms Balsamic Vinaegrette is our own blend of red wine vinegar and olive oil. Added on this cheesecake recipe, you’ll never look at this dessert the same way again.
Preparation time: 30-40 minutes
Cooking time: 40-60 minutes
1 cup polenta
3 cups water
3 tbsp white sugar
2 tbsp parmesan cheese (grated)
220g white chocolate
180g cream cheese
2tsp Gelatin (powdered)
4 tbsp cherry syrup
1 bottle mint jelly
1 bottle red cherries
3 tbsp Gourmet Farms Balsamic Vinaigrette
1 tbsp white sugar
2 tbsp butter
Bring a pot of water to a boil. Put in polenta then lower the heat.
Cook for 30-45 minutes while gradually stirring every 1o minutes to prevent lumps.
Add sugar and parmesan cheese.
Put in a baking pan and set aside to cool.
When it’s cooled, set it in a chiller for 20-30 mins.
When it is firm, bake in oven till golden brown then chill again.
Cream Cheese Mixture:
In a Bain Marie melt white chocolate,cream cheese then add gelatin. A simpler option is to put the ingredients in a bowl suspended on top of a pot of boiling water. The idea is to prevent exposure to direct heat.
Whisk until the ingredients are mixed properly.
Set aside and let it cool in the chiller.
In a non-stick pan, sauté cherries with butter, sugar, and Gourmet Farms Balsamic Vinaigrette. Set aside.
In a ring mold, layer the following ingredients starting from the bottom: (1) baked polenta, (2) cream cheese mixture, (3) mint jelly, (4) balsamic glazed cherries.
Add fresh mint for garnish.
