On a hot skillet, render the chorizo off of its fat and set aside.
Combine the basic paella, egg whites and chorizo oil, on a mixing bowl and knead till you make a sticky mixture.
Roll the mixture in 20-30g each ball and shape according to your liking. Roll in flour just enough to coat it.
Insert a tsp of Gourmet Farms Fresh Herb Dressing, chorizo and quail eggs in the center of the paella and deep fry till golden brown.
Let the oil drip away off the paella and serve with edible flowers and salad greens.
