Gourmet Mango Coconut Soup

Mango and coconut milk in a soup. Who would have thought? Imagine the creaminess and distinct, sweet taste of the coconut milk blended with the tropical tang of mango, creating a unique balance of flavors in a soup. Now do it. Here’s the recipe.

Gourmet Mango Coconut Soup

 

Ingredients:

         1 bottle Gourmet Farms Mango Vinaigrette

         1/4 cup coconut milk

         1/4 cup chicken stock

         1 tbsp red curry paste

         1/4 cup heavy cream

         Salt and Pepper

Directions:        

         1. Combine all ingredients in a sauce pot and let it simmer for 5 mins.

         2. Transfer to a blender and puree soup.

         3. Serve as puree with bread or pass through a fine sieve for a clear smooth soup.
